4 Fillets
of Westernport Bay Elephant Fish.
2 Tablespoons of butter
| Dry Coating: |
50gm Cayenne Pepper |
Mix all dry ingredients together. |

| Method : |
Heat pan or BBQ plate on high for 10 minutes or when pan is very hot and
smoking. Press fillets into the dry coating (both sides) so they are completely covered. Place butter in pan and stir all around pan, add fillets, cook for 2 minutes each side. The fish should now be black. Serve with a lemon or lime wedge, natural yogurt is also good to take the edge off the spice. |
