Cheese topped Gummy Shark fish

Hello All. This is my recipe for Cheesy fish fingers. The
best fish to use for this is Gummy Shark, but you can use any fish.
These taste really good. I hope you like them as much as I
do......Emma :)
| 2 kg of Port
Phillip Gummy Shark (only keep the male fish) eggs milk plain flour bread crumbs cheese |

| Method : |
Heat oil in a frypan Dust the Gummy Shark fish fingers in flour then dip them in a milk/egg mix, then coat in bread crumbs. Place fish in the oil and cook only until just golden brown. Remove from the frypan and place on a baking tray. Lay a slice of cheese on top of each fish finger. Bake the fish fingers into the oven preheated to 150 degrees for 5 minutes or until the cheese melts. Serve with chips or salad and don't let the kids spoil the gummy with tomatoe sauce. |
